Forget everything you know about traditional high tea! Landing at The Westin Brisbane's signature restaurant Batica Dining on 26 September, Sea High Tea, in collaboration with The Fish Girl, trades the usual finger sandwiches for Australia's finest ocean produce.
The premise is simple. Fresh seasonal catch, thoughtfully paired, and presented with the kind of polish you'd expect from a proper afternoon sitting.
Savoury starts strong. Quandamooka oysters come dressed in cucumber, finger lime and ponzu, followed by Stradbroke Island barramundi with herb ceviche, sour cream and sea lettuce. There's raw scampi tartare with scampi caviar and brioche, plus blinis topped with amaebi, shell dust and crema acida.
Spanner crab gets lifted with mango, sea parsley and Marie Rose sauce. Puffed cannelloni with abalone mousse and a chawanmushi with blue grouper and sea grape round things out.
Then come the sweets, and they don't drop the theme. Black ink scones arrive with whipped cream and coral.
There's a lemon sponge with citrus curd and native ice plant, a tart of fruit, pastry curd and cured ocean trout, and a beignet filled with white chocolate diplomat cream. Crème brûlée finishes things off, topped with wakame and blueberry "scampi" caviar.
Three hours, one sitting, and a good excuse to eat your way around the Australian coastline without leaving your seat.
