Behind the Super Butcher venture is Sue McDonald, for whom beef cattle is in the blood, having come from a long line of pioneering Queensland farmers who originally hailed from the highlands of Scotland.
Sue’s knowledge and passion for meat ranges from the ethical raising of cattle and sustainable farming to the art of butchery, health benefits of eating meat and preparation and cooking for the best taste.
As such a visit to Super Butcher is no ordinary shopping trip, with a touch of adventure about it (and one that is recommended that customers rug up before embarking on).
Entry is via the foyer where a bunch of warm coats hangs for customer’s use. Through the next door the main warehouse space houses a jaw-dropping display featuring beef, pork and lamb in various guises (including a dry aged compartment) and roving butchers are on hand to assist with selection, advice and carving according to customer’s individual requirements.
All the meat at Super Butcher is of the utmost export quality yet at unbeatable prices not found anywhere else, and with 5kg packs offering great savings.
Some of the top notch brands found here in carnivore heaven include Certified Australian and Pure Black Angus Beef, Darling Downs Wagyu (coveted by some of the world’s top chefs), 1824 Beef (from Australian Agricultural Co, one of the nation’s oldest companies), Cape Grim Beef, Nolans (which started life as a small Gympie butchery in 1858), Royal, AOM (Australian Organic Meats) and, from Super Butcher’s very own family - Wallumba Beef.
Pork is sourced from Pilton Valley (Darling Downs) and Borrowdale Free Range (near Goondiwindi), while Sovereign Lamb hails from the goldfields of Victoria. Meanwhile smallgoods stocked come from respected 120 year old South East Qld company Gotzinger.
In addition there’s a sizable stash of frozen goods, including the aforementioned crocodile, duck, quail and so forth as well as the pre-prepared like chicken nuggets, pastizzi and pasta.
If that's not enouch, on the way out via the registers, there are shelves of gourmet sauces, marinades, condiments, herbs and spices, BBQ and kitchen equipment and the like, practically everything needed to make a meal of it.
And lastly Sue’s quest to educate the public extends to the customers taking things into their own hands - Super Butcher regularly holds gourmet sausage-making classes which have proven to be a real hit, and plans are afoot for classes on boning and carving sides of beef to make the most of all sections of it.
