Meat at Billy’s in Rosalie Village is where new age artisan butchery and old-fashioned service come together in the one shop.

Not only is Meat at Billy’s (whose sibling at Ashgrove is a local institution) the place to find the very best cuts of premium meats (think Cape Grim Grass-Fed Beef, Free Range Saltbush Lamb and Free Range Pecan Fed Pork*) personally chosen and vetted by Billy, and rarities such as Goose and Heritage Chicken, it’s also the go-to for gourmet ready-to-cook meat dishes.

Here customers will find a virtual smorgasbord of freshly prepared delectable marinated and prepped dinner options, with the butchers on hand to give tips on cooking and best accompaniments.

Look out for Peking Duck Breasts, Hickory Glazed USA Pork Ribs, Italian Meatballs, Red Wine & Garlic Lamb Shanks, Chicken Enchiladas, Panko and Parmesan Cutlets, Beef Wellington, Asian Sesame Pork Medallions, Chicken Hellenica, ready-to-go Stir-Fries (Thai Lemongrass Chicken and Peanut Honey) and delicious marinated kebabs such as Honey Soy, Beef & Vegetable or Thai Coconut Chicken.

Up to 20 flavours of gourmet sausages are available at any given time and these might include Truffle Pork and Porcini, San Choy Bau, Chicken, Spinach and Pine Nut, the hot’n’spicy North African Merguez, Irish, Cumberland or Canadian Pork or the popular Billy’s Spanish Chorizo.

Even Mince Patties come in flavours of Wagyu and Worcestershire sauce, Chicken Margarita or Lamb, Mint and Haloumi.

And if that’s not enough, Meat at Billy’s also sells a range of charcutierie and deli items including Italian and Spanish style salamis and spreadable chorizo, double smoked ham off the bone, double smoked bacon, cheese kabana, Persian feta, Pulled Pork Pasties, Creamy Pumpkin and Chicken Pasties, White or Black Pudding and Piefection Pies, as well as cheerios**.

In addition there’s a locally sourced selection of grocery items, including Kosher salt, Bee One Third smoked honey from Billy’s own bee-hives (atop the Ashgrove shop), Picklehead pickles, Ugly Duck chutneys (by a local fruit rescuer) as well as Scenic Rim un-homogenised milk.
