Bavay Distillery, housed in a 100 year-old-factory, brings a taste of history to Brisbane with a selection of small batch, bespoke spirits.

Located in Morningside at the Rivermakers precinct, the stunning spirits distillery has reclaimed a piece of Brisbane's past, transforming the century old building into a cellar door and bar specialising in gins, rums, vodkas and liqueurs.

The boutique distillery is named after Belgium-born chemist, distiller and entrepreneur, August de Bavay, who in 1918 built the original stillhouse where Bavay stands today.

Step inside the historic brick building and you'll find the original concrete floor and brickwork, with sky-high ceiling and windows letting the light in. The old-world space is filled with tall tables and stools, a massive copper-topped bar, wooden barrels and copper stills, including Bavay's piece-de-resistance, Monica, their 500 litre copper pot still.

Operating from the factory’s original 1920's stillhouse, small batch spirits are crafted using traditional distilling methods with 100 year old recipes, resulting in a unique range of historically-inspired spirits: London Dry gin, Navy Strength gin, Forbidden Fruit pink gin,  Spice Trade dark rum*, Pure Silver coconut rum*, Espresso Liqueur, Vodka and more.

Patrons can sample the array of hand crafted distilled spirits on offer, as well as enjoy a range of classic and signature cocktails. The former includes martinis, mai tais, margaritas and more; while signature cocktails to try are Little Miss Marie (Bavay Vodka, hibiscus, Earl grey tea, and lime) and Aphrodite's Aperitif - Forbidden Fruit gin, manzanilla sherry, watermelon, chamomile and honey with olive salt rim.

*Technically these spirts are cane spirits (made with 100% Queensland sugar cane). In Australia, these would need to age in oak for 2 years to be called a rum.
