Sushi Room

Fortitude Valley

Updated: Mar 10, 2026

Sushi Room is a bespoke Japanese fine dining room located in the base of the Calile Hotel, just off James Street, Fortitude Valley.

Hosting up to 60 diners in an intimate mix of bar seating, cosy booths and tables, the restaurant occupies an exquisite minimalist architectural space designed by renowned architects Richards & Spence.

The striking decor features natural stone, timbers, papers, and traditional Japanese Kuriēto ceramics. A shallow dome hovers above the main dining room with its smoky monochromatic grey interior.

Taking centre stage is a 9.3m solid Japanese Hinoki timber counter floating in a pool of black limestone, where diners can watch the sushi chef bring a sense of theatre to the dining experience as he performs his magic.
