Tucked away in Stafford, Sancho Taqueria & Tequileria is more than a place to enjoy tacos and tequila - it's a heartfelt tribute to family, culture and a lifelong love of New Mexico.

Inspired by founder David Atchison's parents' love of New Mexico, Sancho takes its name from Sancho Panza, the loyal sidekick in Don Quixote - a novel that held a special place in the family's home. 

After meeting, marrying and honeymooning in New Mexico in the 1960s, David's parents developed a lifelong passion for the region's food, culture and landscapes, which now inspire Sancho's menu and overall ethos.

While more intimate than sister venues Farmhouse Kedron and Oh Boy, Bok Choy!, Sancho delivers plenty of personality, with a menu inspired by family traditions and the bold flavours.

Start with the house-made sopaipillas, a treasured family recipe served with red or green salsa (or the Christmas option if you prefer a taste of both), before trying favourites like fresh guacamole, street-style eloté corn and tequila honey glazed wings. Don't miss the Three Sisters either - Sancho's own original creation featuring roasted pumpkin mole and bean hummus topped with New Mexican chilli crisp, a unique dish you won't find anywhere else.

For larger plates, the tacos are a must, with options including 14-hour brisket, crispy fish, pork carnitas and carrot al pastor with pumpkin mole and pinto beans.

Be sure to also sample the grilled agave-glazed chicken, slow-braised lamb shoulder and grilled sugarloaf cabbage drizzled with wildflower honey - a standout dish that has won over meat lovers and vegetarians alike.

Saving room for dessert is non-negotiable at Sancho, where a selection of sweet treats provides the perfect finale. Our pick? The New Mexican Flan - a silky crème caramel topped with chamoy granita - or the sweet sopaipillas drizzled with wildflower honey for a taste of New Mexico's most beloved dessert.
