Celebrity chef Luke Nguyen's eponymous eatery Fat Noodle serves up tantalizing market fresh dishes with a South East Asian flavour in the stunning surounds of The Star Brisbane.

Renowned for his Vietnamese heritage and cuisine, Luke Nguyen also has a family history in China. His inspiration for Fat Noodle comes from both countries and is reflected in the taste combinations and fusion flavours.

Must-try dishes include Luke’s legendary Fat Pho, featuring the chef's signature beef broth, thinly sliced Wagyu rump & smoked brisket, bean sprouts, fresh rice noodles, herbs and chillies. Others are the Seafood Laksa (aromatic coconut seafood broth, egg noodles, rice noodles, prawns, calamari, diamond clams, mussels, fish cake, quail egg and bean sprout); and Deluxe Seafood Pad Thai (calamari, prawn, diamond clams, mussels, rice noodles, seafood pad Thai sauce, bean sprouts, peanuts, served in egg net).

Fat Noodle’s menu also has some new tasty additions, all of which come highly recommended, including Crackling pork Chilli Basil (wok tossed crackling pork, chilli basil sauce, onion, green beans); Lamb riblet (twice cooked lamb riblets, palm sugar and mint sauce, chilli, shallot); and BBQ platter (crackling pork and pork ribs).

Other new dishes to try include Hainan Chicken (poached chicken, aromatic Jasmine rice, chicken broth, Asian greens, ginger shallot, chilli sambal) and the delectable dessert Vietnamese coffee Crème Brûlée (Crème Brûlée, mixed seed crumb, berries).

As well as a small boutique wine list, there's bottled and draught beer and a refreshing range of Asian style drinks including young coconut juice, ginger or sour plum lemonade, lychee and lemon soda or Vietnamese ice coffee.

Good to know - Fat Noodle also do a delicious $75 banquet menu, which is top value and includes salmon ceviche, Luke's chicken salad, pork mince crispy rice paper rolls, Vietnamese spring roll, char-grilled half chicken with Asian greens; Deluxe Seafood Pad Thai; and Banana Tapioca. 

Need to know - Fat Noodle is located on Level 5, within the Casino. Guests must be aged 18 years or over to enter the Casino.
