The menu also boasts a delicious range of charcoal BBQ skewers, from wagyu beef and lamb, to pork belly, chicken wings, squid and enoki mushrooms with garlic sauce. The skewers, from a local recipe in Leshan, Sichuan, are pre-marinated in more than 20 herbs including star anise, cinnamon, and sweet pine.

And rounding out the traditional menu are more exotic dishes like spicy eel and fried rabbit with red and green chilli, or, for the more adventurous - pork trotter soup or pickled ginger bullfrog.

Originating from Wushan, Wanzhou, Chongqing, this dish uses marinating, roasting, and simmering techniques to create a glutinous, soft, spicy, and rich flavour.
