SEYMOUR'S COCKTAILS & OYSTERS HAS CLOSED IN NOVEMBER 2018.
Seymour’s Cocktails and Oysters is Brisbane’s most atmospheric bar - a New Orleans-style 1920s speakeasy jazz bar hidden behind a heavy red velvet curtain on Petrie Terrace.
Step behind the curtain to a lost golden era far removed from the Brisbane streets outside, with dim lamp-lit dark wood-panelled booths, chandeliers, blaring jazz, bar tenders in braces, handmade brick walls and wallpaper, shelves of pewter and silver mementoes and black and white photos and a piano in the front corner.
Punters can elect to sit in one of the cosy intimate booths, on the line-up of bentwood stools along the bar or take the mysterious red-lit doorway at the back to where there’s a smattering of seats outside in the fairy-lit courtyard under the stars.
Food-wise, Seymour’s signature is the must-try platter of oysters, which are freshly shucked to order and come served with little dishes of horseradish cream, shallots and red wine sauce, lemon and a small bottle of Aphroaig whiskey, which is added to each oyster via an eyedropper to create a whole new taste sensation.
Other tapas style delicacies include spanner crab 'cigars', truffle potato bomba or duck pithiivier with smoked onion and mushrooms, while for something more substantial there's the likes of Quail Ballontine with pancetta, foie gras and brussel sprouts or Low and Slow Lamb Shoulder with cauliflower, cranberries and yoghurt.
Drinks-wise Seymour’s has 3 beers on tap including Guinness and 2 on rotation and some rare and interesting bottled beer such as Rogue Mango Astronaut Ale (from Portland, Oregon) and Bridge Road Brewers Vanilla Ice-cream Ale.
Naturally cocktails are a house specialty with a Seymour’s version of Irish Coffee and Sazerac (served from a barrel) a signature, as well as a range of 12 classics while any cocktails can be made to order.
